Introduction

This is a mixture of black beans, tuna, corn, cilantro, Hatch green chile, and salsa that's just perfect for a taco shell or small tortilla. Spice it up even more with hot sauce, lime, and fresh onion greens! Ingredients

    1/2 cup canned sweet corn, rinsed
    1-15 oz can of low/reduced sodium black beans, rinsed
    1-5 oz can of chunk light tuna (in water, not oil), drained
    1/2 cup of medium or hot chunky salsa
    1 whole roasted Hatch green chile, diced (or a small can of green chiles)
    1/8 of a medium onion, finely diced
    2 Tbsp of fresh cilantro, finely diced

Tips

If you don't have freshly roasted Hatch Green Chile you can substitute canned chilis. If you want to save calories, eat two servings of this without the tortilla or taco shell.


Directions

After dicing and draining, mix all ingredients thoroughly. If you like you food a bit spicier (this is actually fairly mild) add lime, hot sauce of choice or onion greens while mixing.
Makes 6 1/2 cup servings...perfect for a taco shell or a small tortilla.
