Ingredients

    1 tsp Cumin seed
    1 tsp Garlic powder
    1 tsp Onion powder
    1 cup Yellow Sweet Corn, Canned
    0.50 cup Tomato Sauce
    1 lb Beef, tip round
    0.50 cup (8 fl oz) Water, tap
    1 tbsp Extra Virgin Olive Oil
    1.50 cup Zuccini Squash
    1 dash Salt
    1 dash Pepper, black

Tips

For a extra kick add 1 tsp of chili powder.
You can add more or less salt for taste.


Directions

Brown Beef in olive oil.
add tomato sauce, water, zucchini, and Corn.
And salt, pepper, cumin, garlic and onion powder
Simmer till zucchini is tender.
Add water as needed to cook zucchini.

Serving Size: Makes 4 1 cup servings

    Good, one pot meal. I used the juice from the can of corn instead of water. If you cover the pot, you don't need to add extra water to cook the zucchini. - 2/6/20
