Introduction

This all natural compote made from fresh berries is to die for on the Banana Buckwheat Pancakes. It would also be great on vanilla ice cream. This all natural compote made from fresh berries is to die for on the Banana Buckwheat Pancakes. It would also be great on vanilla ice cream.

Ingredients

    1 cup fresh raspberries, rinsed
    1 cup fresh blackberries, rinsed
    2 cups fresh blueberries, rinsed
    1 cup *granulated Splenda
    1/4 cup cold water
    2 Tablespoons cornstarch

Directions

Cook the berries and Splenda over medium heat in a saucepan. While they are cooking, mix the cold water and cornstarch. When the cooking berries are bubbling and have released their juices, add the cornstarch mixture, and stir well until mixture thickens. Makes about 6 servings, 1/2 cup per serving.

*Make sure to use the granulated, and not the regular Splenda. The granulated is fluffier and is equivalent in measuring to sugar.
