Ingredients

5.0 ear, medium (6-3/4" to 7-1/2" long) yields Sweet Corn, Fresh
1.0 cup bell pepper, red, sweet, raw
6.0 serving Green Onion (fresh-1 stalk)
2.0 oz Cotija Queso Seco Cacique cheese
0.25 cup Chobani 0% Plain Greek Yogurt
0.25 cup Lime Juice
1 tsp smoked paprika
1 tsp ancho chili powder
Directions
1. Grill corn, set aside to cool.
2. Chop up red bell pepper, green onions.
3. In a small bowl combine Greek yogurt, smoked paprika, and ancho chili powder
4. Slice off corn kernels, combine in a bowl with red pepper and green onion
5. Mix dressing into salad
6. Crumble cheese on top, then mix in.
7. Serve immediate or cool, covered, in fridge.
