Ingredients


    75 g finely chopped dried (unsweetened) dates
    1 cup boiling water
    1/3 cup brown sugar
    1/4 cup unsweetened plain almond milk
    1/4 cup applesauce
    1 tbsp vanilla
    1 cup + 2 tbsp whole wheat pastry flour
    2 tsp cornstarch
    1 1/2 tbsp cocoa powder
    1/2 tsp baking soda
    1 tsp baking powder
    1/4 tsp salt
    ~Topping~
    2 tbsp brown sugar
    3 tbsp unsweetened shredded coconut
    1/3 cup dark chocolate chips

Directions

Preheat oven to 350 F, and lightly grease an 8-inch square pan.
Soak dates in the boiling water for 15 minutes.
Add the sugar, almond milk, applesauce and vanilla, whisk to blend well.
In a large bowl, whisk together the flour, cornstarch, cocoa, baking soda, baking powder, and salt. Pour the wet mixture over the dry and stir gently to blend.
Pour into the prepared pan, smoothing the top.
Combine and sprinkle the topping ingredients over the cake.
Bake for 35-40 minutes.
Allow to chill before cutting.
