Ingredients

800 grams, 2 normal cans tomatoes, undrained but broken with spoon, or use real tomatoes
1 large cubed eggplant with peel
2 medium sliced zucchini
1 big chopped bell pepper
1 big sliced onion
6 at least, cloves crushed garlic
3/4 pound chopped fresh mushrooms, in big pieces
salt and pepper to taste
oregano or herbes de provence to taste
Directions
Makes a lot--info calculated on 8 servings but these would be big servings!
Sauté onions and garlic until they smell good and start turning golden. Add canned tomatoes with their juice, break up a bit. Add the rest of the veggies, stirring frequently until the start to get a little juicier as they cook.
Simmer for about 1.5 hours over a low flame and stir occasionally.
Serve in abunch of different ways, read into.
