Introduction

Ingredients

    1/2 medium (2-1/2" dia) Onion, fine dice
    4 cloves Garlic, minced
    1 tbsp Extra Virgin Olive Oil
    1 tablespoon Penzey's Cajun Spice Seasoning
    1.5 cup Pinto Beans, drained
    1 cup Thai Kitchen - Coconut Milk (unsweetened)

Directions

saute onions in the olive oil for about 3 minutes, until translucent. Add garlic and saute for another minute. Add spice mix and pinto beans, stirring to combine. Stir in coconut milk, and simmer, stirring occasionally for 20 minutes, or until a saucy consistency is reached. Serve with rice or quinoa and a fresh fruit salsa.
