Ingredients

    1.5 cup Oats, Quaker (1 cup dry oats)
    8 tbsp Coconut Flakes, Organic, Unsweetened
    1 serving Dates (Sun Date California Pitted; 5-6 dates)
    0.25 tsp MORTON Sea Salt, Fine Salt
    .5 tsp Baking Soda
    1 large Egg, fresh, whole, raw
    2 tbsp Flaxseed
    .25 cup Coconut Oil
    3 serving Dates (Sun Date California Pitted; 5-6 dates)
    1 tsp Lemon Juice 'Real Lemon' 100% juice
    0.25 tsp MORTON Sea Salt, Fine Salt

Tips

I keep a batch in my freezer and it's a nice snack after my workout.


Directions

1) Grind oatmeal, cocnut and 5-6 pitted and cut up dates, sea salt and baking soda
2) add egg, flaxseed and coconut oil - pulse until combined
3) press into pan (reserve 1 cup for topping)
4) using a piece of parchment paper - press mixture down firmly
5) In a separate bow create the date layer ingredients: (remaining dates, lemon juice and sea salt) - make sure you pit the dates and cut up to small pieces
6) spoon over top of oats as evenly as possible using small spoonfuls and drop in place
7) cover with remaining oats by sprinkling evenly on top
8) Bake for 20 min at 325 degrees
