Ingredients

    0.5 cup 365 Organic Quinoa
    1.5 tbsp Butter, unsalted
    1 tbsp Argo Cornstarch
    1 cup Fat free half and half
    0.5 cup Yogurt, Greek gods traditional plain Greek yogurt
    6 serving Cheese, Cabot Extra Sharp Cheddar Cheese (1 serving = 1 ounce)
    1 serving Borden Colby & Monterey Jack Cheese 2 oz
    0.5 tsp Garlic powder
    0.25 tsp Onion powder
    0.25 tsp Mustard Powder, Dried Spice - 1 tsp ggg (by MG7_FIT)
    0.25 tsp Morton Iodized Salt

Tips

Rinse quinoa by letting it soak for 15 minutes, then rinse before cooking.


Directions

1) Cook quinoa according to package directions making sure to rinse thoroughly before cooking.
2) Meanwhile on stovetop over medium heat melt butter, then add cornstarch, garlic powder, onion powder and dried mustard.
3) Stir until roux is formed.
4) Add half & half, and greek yogurt and continue to stir until starting to thicken about 4-6 minutes.
5) Once it's thickened up turn heat off and add shredded cheese.
6) Stir till melted and taste for salt & pepper.
7) Add cooked quinoa and stir till combined.
