Introduction

Ingredients

    1 can field peas – rinsed & drained
    1 can shoepeg corn – drained
    1 medium jar chopped pimentos (drained)
    1 medium purple onion – chopped
    1 green bell pepper – chopped
    ½ cup chopped fresh cilantro

    Marinade:
    ½ cup Splenda
    ½ cup olive oil
    ¼ cup white vinegar
    1 Tbsp. tiger sauce


Directions

Combine all vegetable ingredients in large covered bowl.

Combine all marinade ingredients together and mix thoroughly. Pour marinade over pea & corn mixture, mix well and cover. Marinate for at least a few hours – preferably overnight.

Serve with Tostitos scoops. Or use as a relish over chicken. Serves 10.
