Introduction

Super-quick preparation for a delicious soup I've been making for years. What makes this soup extra delicious are the optional sherry and parmesan cheese when serving--those calories are not included here. Ingredients

    1 quart tap water
    2 cups lentils
    2 quarts homemade or low sodium beef broth
    1 Tb Better Than Bouillon, roasted beef base, low sodium (optional)
    3 Tb white vinegar
    2 cups canned diced potatoes
    2 cups canned carrots
    7-8 ounces diced ham
    Salt to taste

    Optional for serving:
    dry sherry
    grated parmesan cheese


Tips

Cooking sherry is 20 calories per tablespoon--I use about 1/2 of that per bowl. Parmesan cheese is about 22 calories per tablespoon. Because of the ham and the parmesan cheese, be careful not to add too much salt. (If using homemade beef stock, you won't need the Better than Bouillon and so the sodium will be reduced.)


Directions

Before commencing, add water to lentils in large soup pot and let soak for about an hour. When ready to begin, add beef broth, beef base (if using a commercial beef broth), vinegar, carrots, and potatoes. Start to cook over low heat while dicing and adding ham steak. Cook on low for 1-2 hours and then taste for seasoning. Add salt if necessary. Serve with a splash of sherry and a sprinkle of parmesan cheese.
