Ingredients

    4 cups sweet potato, cooked and mashed
    2 cups orange juice
    1 tbsp vanilla extract
    .5 oz bourbon
    1 tbsp maple syrup
    4 large eggs
    2 tbsp orange peel
    4 tbsp heavy whipping cream
    .5 tsp salt
    1 tbsp brown sugar (optional)

Directions

Preheat oven to 350 degrees.
Spray a glass or ceramic pie dish with cooking oil.
Cook and mash sweet potatoes. Set aside.
Combine orange juice, vanilla, bourbon, and maple syrup in a sauce pan and cook down by half.
In a large bowl, combine sweet potatoes, orange juice mixture, eggs, orange peel, cream, and salt. Beat with an electric mixer until smooth and creamy.
Turn out into pie dish and bake for 45 minutes, or until set in the center.
Optional: Sprinkle pie with brown sugar and bake 10 minutes more.
