Introduction

Low carb breakfast muffin/quiche. Easy to make ahead for meal prep. Low carb breakfast muffin/quiche. Easy to make ahead for meal prep.
Number of Servings: 12

Ingredients

    1 cup, chopped Green Peppers (bell peppers)
    1 cup, chopped Onions, raw
    5 grams Mushrooms, canned
    1.5 cup, shredded Cheddar Cheese
    8 large Eggs
    1/4 c. 2% milk
    1 roll pork breakfast sausage
    *Optional: pico de gallo, for garnish

Directions

Brown sausage in skillet; drain fat. Add chopped peppers, onions and mushrooms. Remove from heat; cool.
Beat eggs with milk. Add sausage/veggie mixture and shredded cheddar cheese.
Pour mixture into lightly sprayed muffin tin.
Bake at 350 degrees for 20-25 minutes.
Let cool before removing from muffin pan to ensure eggs do not come apart.
Serve with salsa or pico de gallo for garnish
