Ingredients

IN STAND MIXER:
1 cup Butter, unsalted
1 cup, packed Brown Sugar
1/2 cup Granulated Sugar
ADD:
1 tsp Vanilla Extract
2 large Egg, fresh, Room temperature
MIX DRY INGREDIENTS IN A BOWL:
3 cup Oats, Quaker (1 cup dry oats)
1 1/2 Cup Wheat flour, white, bread, enriched
1 tsp Baking Soda
1/2 tsp salt, table
1 TBSP Corn Starch
MY "MIX-INS":
1/2 cup Chopped Almonds
1 Cup Pumpkin Seeds (whole seeds, roasted)
3 tbsp *Flax Seed
1 Cup Nestle White Chocolate Morsels (baking)
1 Cup Cranberries, dried, sweetened (craisins)
Tips
You can ditch the chocolate chips or white morsels for dried fruit. I like dried apricots and blueberries for sweetness without the extra sugar. Post your ideas for your own personal MIx-Ins in comments! I would like to see what your ideas are!
Directions
In stand mixer add room temp butter and both sugars.
Mix on medium high 5 min until fluffy and light in color.
Add Vanilla.
Add one egg and a time, and mix on low speed until incorporated.
Add the dry ingredients and mix on low until just incorporated.
Add your healthy "Mix Ins" on low speed until it appears they are well incorporated with the dough.
Using 1/8 cup cookie scoop, place on parchment lined cookie sheets about 2 inches apart.
Bake 350 degrees about 11-13 minutes or longer if needed until light golden brown on top.
Let sit on cookie sheet for 5 minutes before transferring to cooling rack.
