Ingredients

    10 large brown eggs
    4-6 slices uncured bacon, cooked
    1/4 cup almond milk, unsweetened
    1 red bell pepper
    1-2 jalapeno peppers (optional)
    2 cups spinach
    1 Tbsp. coconut oil, melted
    pepper

Tips

This recipe is gluten free, dairy free, and sugar free.


Directions

1. Heat oven to 350 degrees F.
2. Fry bacon until fully cooked. Roughly chop.
4. Finely chop bell pepper, jalapenos, and spinach.
5. In a medium bowl, whisk together eggs and almond milk. Add pepper to taste. (Note: The bacon provides enough saltiness, so there's no need to add extra salt.)
6. Lightly grease 12 muffin cups with coconut oil. Use more oil if necessary.
7. Add the ingredients to the muffin cups in this order: spinach, bacon, jalapenos, and red bell pepper.
8. Using a container with a pouring spout, carefully pour the egg mixture evenly into each muffin cup.
9. Bake for 20-24 minutes, or until the egg is set. Let the muffins cool for a bit before removing them from the cups.
10. Enjoy!

Reheating instructions:
Place two muffins on a plate and microwave for 25-30 seconds. Microwaves less than 1100 watts may need more time.
