Ingredients

One 1-pound bunch of spinach, roots and coarse bottom of stems removed.
2 1/2 tablespoons toasted and ground white sesame seeds.
1 1/2 teaspoons of granulated sugar
1 1/2 teaspoons of soy sauce
Directions
1. Clean the spinach.
2. Bring a large saucepan to a boil. Turn down to medium-high heat, add the spinach and cook for 30 seconds, or until just wilted and still bright green. Drain under fresh cold water. Gently squeeze the spinach to release the excess water.
3. Combine the toasted and ground sesame seeds in a small bowl with the sugar and soy. Stir until well mixed.
4. Cut the spinach into 1 inch pieces, squeeze out excess water, and place in a small bowl. Pour the sesame mixture over the spinach, toss well to combine.
