Ingredients

6 Large Eggs
1/4 Low Fat Milk
3 tbsp onion, minced
3 Tbsp Jalapeno Pepper, minced (optional)
1/4 cup sweet bell pepper, minced
1/4 cup shredded cheddar cheese
1 dash Salt
1 dash black pepper
Nonstick Cooking Spray
Tips
This is a great recipe to adapt and add your favorite ingredients. They are great to warm up in the microwave to enjoy throughout the week with toast or in a warm tortilla.
Directions
Preheat Oven to 350 F. Coat 12-cup muffin pan with nonstick spray.
In a large bowl, whisk together eggs and milk.
Whisk 2-3 minutes until it is a uniform consistency.
Add in salt, black pepper, minced peppers, minced onions and minced jalapenos, if using.
Evenly distribute mixture between 12 muffin cups.
Sprinkle each cup with 1 tsp of cheese.
Bake 20-25 minutes until edges are slightly browned. Let cool 3-5 minutes before gently removing from muffin pan. Allow to cool to room temperature before storing in the refrigerator, or eat while warm!
