Ingredients

    1 lb ground turkey
    .5 cups diced onions
    1.5 cups monterey shredded Cheese
    1/2 diced black olives
    3/4 package frozed spinach
    5 whole wheat tortillas
    2 cans enchilata sauce

Directions

Heat oven to 350 degrees. Spray an 9x13 pan with cooking spray.

Cook ground turkey and onions in a large skillet then drain and place back in skillet. Thaw frozen spinach as directed. Then add thawed spinach, diced black olives, 1/2 cup cheese and 3/4 can enchilata sauce to skillet and mix well.

Roll mixture in 5 tortillas and place in 9x13 pan. Top with remaining enchilata sauce and cheese. Bake for approximately 20 minutes.

makes 5 servings.
Serve with light sour cream (optional).

    I added seasoning to the meat and nixd the black olives, also made 6 instead of the 5. Overall this was very good. Never would have thought to add spinach! - 10/5/12

    Delicious-- even my picky boyfriend loved these. To cut calories, I used corn tortillas, cut the olives, didn't grease the pan, used a little low fat sour cream and some jalapeno juice. Tasty! And, it made about 15 enchiladas! I was pretty full after just two and a huge salad! - 3/23/09

    Wow! Suprisingly tasty. The only thing I did differently was season the turkey (onion powder, garlic powder, S & P) and skip the olives. I used a white chedder/ jack cheese combo. YUMMY! I can't wait for the leftovers tonight!!! - 3/10/09
