Delicious-- even my picky boyfriend loved these. To cut calories, I used corn tortillas, cut the olives, didn't grease the pan, used a little low fat sour cream and some jalapeno juice. Tasty! And, it made about 15 enchiladas! I was pretty full after just two and a huge salad!
