Number of Servings: 6

Ingredients

    4 tbls sour reduced fat sour cream or fat free kind
    1 cup grated low fat cheddar cheese; either type you want to use
    1 cup cooked white rice, you can use brown rice if you like
    1 10 oz package thawed chopped broccoli or use the spears
    1 can cream of checken soup or you can use the reduced fat kind
    2 tsp of redice fat margarine
    1 cup diced or shredded chicken breast or you can use canned chiken if you like to save time
    salt and pepper to taste

Directions

Boil your chicken breast or tenders for 20 minutes, and shredd or dice them. While chicken is cooking steam or cook your rice. In a large bowl combine the soup, broccoli, sour cream, margarine and half of the cheese. Once chicken and rice are done add to the mixture; then. salt and pepper to your taste. Pour into a caserole or baking dish and top with the remaing cheese abd bake for 20 to 25 minutes @ 350 or until bubbly. makes 6 servings.

You can also add some ritz crakers crumbs to the top if you like

    I thought it was very yummy, but needed a little bit more flavor. My family did not like it, so I will not be making it again. I did put all of the chese in the casserole and topped with bread crumbs. I also added onion for flavor. - 12/29/08

    This was easy and delicious. Great comfort food. We'll definitely make this again. I used all the cheese in the inside and put a tablesppon of panko breadcrumbs on top. - 11/9/08

    I made a few changes I added 1 cup frozen corn thawed used 98% fat free cream of mushroom soup and added all the cheese to the mixture topped it with 1 tblsp bread crumbs and used the butter cut into small pieces placed on top instead of inside thanks for sharing - 9/25/08
