Ingredients

1 cup whole-wheat flour
1/4 cup Sugartwin no calorie brown sugar substitute (if this cannot be obtained you can use Splenda no calorie instead)
1/4 cup egg substitute
1 tsp baking powder
1/2 tsp salt
1 cup quick-cooking oats
1 cup water
2 tbsp unsweetened applesauce
1/4 tsp cinnamon
1/2 cup apples, peeled and diced
Directions
1. Preheat oven to 425 degrees F.
2. Spray 12 muffin cups with non-stick spray, or use paper muffin liners.
3. In a medium mixing bowl sift flour, sugartwin, baking powder, salt, and cinnamon.
4. Add oats to flour mixture.
5. Add water and egg substitute to dry ingredients, stir until just mixed (batter will be lumpy).
6. Fill each muffin cup 2/3 full.
7. Bake for 10-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
