Introduction

Chicken adds a hefty (and delicious) shot of protein to a fruit salad with the tastes of summer. Chicken adds a hefty (and delicious) shot of protein to a fruit salad with the tastes of summer.
Number of Servings: 2

Ingredients

    * 1 chicken breast (about 4 ounces), already cooked
    * 1 cup of pineapple tidbits or crushed pineapple, with juice
    * 1 large peach
    * 1/2 cup of seedless grapes
    * 1/2 cup of orange juice with calcium, no pulp

Directions

1) Cut chicken breast into small chunks.
2) Slice peach, then halve slices.
3) Halve grapes, if desired.
4) Combine all ingredients in a large bowl, mix well.

Best if refrigerated for at least one hour. Divide equally into two portions. May easily be doubled or trebled for more diners.
