Introduction

A quick and easy dinner!! A quick and easy dinner!!
Number of Servings: 8

Ingredients

    11.4oz Shrimp, cleaned
    1 Med. Onion, Cut into large strips
    2 Cups Bell Peppers, cut into shrimp
    2 Stalks of Celery, Cut into strips
    3Cups Frozen Broccoli (We used a store brand and any kind is fine)
    2Cups Frozen Mixed Veggies (Again we used a store brand and any kind is fine)
    1 17oz, Francesco Rinaldi Vodka Sauce

Directions

Prep Time: 10min
Before you start cooking I advise you spend 10min getting everything together measured out and cut the into strips. We recommend using shrimp which has been cleaned already, which you will only need to do a nice rinse.

Cooking Time: Approx. 30
-Season shrimp to taste if desired
-Saute or pan fry shrimp on a non-stick pan. When done, put shrimp to the side.
-While cooking shrimp steamed broccoli and mixed veggies. They can be steamed at the same time to save time. And put to the side.
-Saute Bell Peppers, Onion, and Celery until lightly browned.
-Add the Francesco Rinaldi Vodka sauce to the Bell Peppers, Onions, and Celery. And cook together until the sauce is done.
-Combine the steamed broccoli and mixed veggies and the shrimp to the pan with the bell peppers, onions, celery, and vodka sauce.
-Cook until desired texture or for 5-7minutes.

Serving Size: 8 Servings
Can be served on a bed of wheat pasta or along side a Ceaser salad.

    This was a great dish. Loaded with veggies and great taste with the shrimp. Be prepared for the thickness of it...almost a stew consistency, but the kids loved it and didn't recognize they were eating so many vegetables. - 8/22/08
