Introduction

Ingredients

    8" flour tortilla (warmed)
    1 egg + 1 eggwhite
    1 tbsp salsa
    1 tbsp reduced fat sour cream
    0.5 oz low fat cheddar cheese

Tips

you can add tomatoes and lettuce to this, or fry 2 tbsp of finely chopped onions before adding the egg for extra flavour.


Directions

Scramble the egg in a frying pan with salt and pepper to taste. When egg is cooked shut off the heat, gather the egg into one pile and put cheese on top, cover and let the cheese melt. Place the egg in center of the tortilla, top with the sour cream and salsa. Wrap it up in the tortilla by folding bottom up first then the sides in, leaving the top open.
