Introduction

Grilled vegies with the bite of feta and tang of balsamic vinegar. Grilled vegies with the bite of feta and tang of balsamic vinegar.
Number of Servings: 5

Ingredients

    1 Zucchini - Cut into 1/4" thick slices
    1 - Green Pepper, quartered
    1 - Red Pepper, quartered
    1 - Red Onion, sliced 1/4" thick
    1/2 cup Extra Virgin Olive Oil
    3 tbs Balsamic Vinegar
    1 tsp Oregano
    Salt and Pepper to taste

Directions

Grill vegetables on stove top grill, or on barbecue grill, until softened and marked from the grill. Cube vegetables into bite sized pieces. Whisk together olive oil, balsamic vinegar, oregano, salt and pepper. Pour dressing over vegetables, crumble feta on top and mix. Serve immediately or store in refrigerator for up to 5 days. Serves 5.
