Ingredients

    1 tablespoon extra virgin olive oil
    1 small onion cut into wedges
    6 to 8 small new potatoes
    1 tablespoon rubbed fresh sage
    1 tablespoon rubbed fresh rosemary
    1 teaspoon dried, ground thyme
    1/4 tesapoon freshly ground black pepper
    1/4 teaspoon garlic powder
    1 dash of salt
    2 lean pork chops, trimmed of all exterior fat
    1 can low-fat cream of mushroom soup
    1/4 cup white wine

Directions

Pour olive oil into slow cooker. Cut onion into 8 wedges and add to pot. Scrub potatoes and cut into bite-sized pieces and add to pot. Sprinkle with ground pepper, salt, garlic powder, rubbed sage, rubbed rosemary, and ground thyme. Toss to coat vegetables with oil and seasonings.

Wash pork chops and lay on top of vegetables in slow cooker. Sprinkle with additional herbs, if desired. In a small bowl, whisk together soup and white wine. Pour evenly over pork chops and vegetables.

Cover and cook on low 6 or more hours.
