Ingredients

    1 C uncooked long-grain rice
    4 chicken breast halves
    ¼ tsp garlic salt
    ¼ tsp pepper
    2 C celery, sliced
    2 Tbsp butter or margarine, melted
    15 oz spaghetti sauce (Nana uses Ragu garden vegetable)
    1 tsp Italian seasoning
    (optional) grated parmesan cheese

Directions

Cook rice and set aside. Cut chicken into bite size pieces; sprinkle with garlic salt and pepper. Sauté chicken and celery in butter in a non-stick skillet 4-5 minutes or until no longer pink. Stir in spaghetti sauce and Italian seasoning. Bring mixture to a boil; cover, reduce heat, and simmer 10 minutes. Serve over rice. Yields 4 to 6 servings.

    Incredible!
    My mother made this when we were kids! She even used Ragu. It's a staple in my home. I've altered it slightly to make it more healthy by cooking with olive oil instead of butter and serving atop of Brown Rice. It's delicious! - 1/19/09
