Introduction
This tastes somewhat like a soy version of "honey ham" that's been sliced up and pan-fried. Using a non-stick pan eliminates the need for added oil, and I use a low-fat extra-firm brand of tofu (President's Choice) to keep the fat to a minimum so that I can tolerate it. Ingredients

1/2 cup beet juice
1 tbsp garlic powder
1 tbsp fresh parsley, minced
2 tbsp lemon juice
1 tbsp low-sodium soy sauce
1 1/2 tbsp sugar-free maple syrup
350g extra-firm low-fat tofu, sliced into 16 pieces
Directions
Combine all ingredients but tofu in a bowl or measuring cup.
Arrange tofu pieces in a shallow baking dish, and pour the marinade overtop.
Marinate in fridge for two hours, flipping slices halfway through.
Drain, reserving 1/4 cup marinade.
Cook in a non-stick pan over medium heat for 3 minutes a side.
Add reserved marinade and cook over high heat for 2 minutes longer.
