Introduction

I found a recipe years ago for spicy asian chicken soup, and loved it so much, but of course, you have to tweak it for yourself and the result is this great soothing soup to help you fight a cold or flu. Number of Servings: 8

Ingredients

    7 cups or 4 cans of chicken broth
    one inch of Ginger root sliced into 8 slices
    1 chicken breast cut into thin strips
    1 can of mushrooms or one cup of fresh ones, shitake is best for this recipe.
    One large onion sliced into thin slices or rings
    One can of spinach with broth
    one can of carrots with broth
    one half tsp-1 tsp of red pepper flakes
    4 Tbsp or 1/4 cup Tamari soy sauce
    4 Tbsp or 1/4 cup of lime juice
    Zest of one lime or more to make two tsp

Directions

Pour broths into a large 6 quart pot. Add ginger, Red pepper flakes, soy sauce, Lime juice, Sliced Chicken breast, sliced onion and Fresh mushrooms and Carrots if you desire to use fresh ones.

Bring to a boil, and boil for 20 minutes or until Carrots and chicken are cooked.

chop the canned (or frozen) spinach into fine pieces. After the broth is cooked, add canned veg and heat to boil, stir in Cilantro and Lime zest and serve. Serves 8, but I don't have a measurement for the size of servings, I'd guess about 12 oz servings. We just nosh on it all day to keep a cold at bay. There are 94 calories in an 8th of this recipe.

This recipe is low fat, low carb and with the substitution of tofu or Veggie chicken and veggie broth can be just as wonderful for a vegetarian.
