Number of Servings: 8

Ingredients

    Cooking spray
    1 cup chopped onion (about 1 medium)
    2 large stalks celery chopped
    2 large carrots chopped
    1 Tbsp garlic powder (or to taste)
    5 cups water
    4 cubes veggie or chicken bouillon cubes
    2 Tbsp Worcestershire Sauce
    Salt to taste
    Pepper to taste
    1/2 tsp dried thyme
    1 cup lentils
    1 can petite diced tomatoes (with juice)
    16 oz bag frozen spinach
    1 cup sliced button mushrooms
    1 Tbsp herb vinegar (I use rosemary)

Directions

In a dutch over, spray cooking spray. Add onion, celery and carrots. Saute until onions are softened. Add garlic powder, water, boullion cubes, Worcestershire Sauce, Salt, Pepper and Thyme. Stir in lentils and bring to a boil. Reduce heat and simmer 15 minutes. Add remaining ingredients and return to boil. Reduce heat once again for 15 minutes. Ready to serve when lentils are tender.

    Easy enough and pretty good. My family is not a big fan of tomatoes in soup, and I should have cut down on the amount, but didn't.... my bad. - 10/11/12
