Introduction

This is my favorite chicken salad and everyone who tries it has been hooked! I buy a package of mini sweet peppers so I can add more variety with color and it gives it that crunch it needs since I hate celery. Ingredients

    1 pound of cooked chicken breast chopped
    1/2 cup of Mayo - you can sub Lite Mayo for less fat
    1/4 cup of sweet peppers, minced (the more colors the better!)
    1 1/2 tbsp of salt, if you want to use less just add more garlic powder and paprika
    1/2 tbsp of paprika
    1/2 tbsp of garlic powder
    1/2 tbsp of black pepper
    4 Whole Wheat English Muffins Toasted (I prefer Thomas' brand myself)


Directions

Put it all in a bowl, mix well and serve on your toasted English Muffins. GREAT with a pickle spear on the side and a tall glass of ice water. You can also add lettuce, tomato & onion for a little more veggie power.
