Introduction

I created this on labor day because I wanted to have some homemade banana puddin' just like the rest of the family. Banana Puddin' is a southern tradition. And the reduced fat nilla wafers get nice and soft, not mushy like with the regualr nilla wafers, because the reduced fat ones are very crisp. Ingredients

    JELLO SUGAR FREE FAT FREE BANANA CREME PIDDING MIX ( 1 box)

    COOL WHIP LITE ( half a tub)

    1% MILK ( 2 cups, COLD)

    1 LARGE ( XL) BANANA

    REDUCED FAT NILLA WAFERS ( 24 cookies)

Directions

Prepare the JELLO SUGAR FREE FAT FREE BANANA CREME PUDDING MIX as directed on the back of the box, with 2 cups cold 1% milk. Using a wire whisk or beaters mix for 2 minutes. Then fold in half a container ( 12 servings of 2 tbsp each) of COOL WHIP LITE into the pudding mix. ( you can also use COOL WHIP FREE but the LITE tastes better to me)

Add the REDUCED FAT NILLA WAFERS and SLICE BANANA. Chill in fridge for at least 10 minutes ( the longer the better as it will soften up the cookies) and then serve.

The beauty about Southern Banana Puddin' is it is better the next day!!

*You can also do this recipe the traditional way and Line a glass pan with REDUCED FAT NILLA WAFERS followed by a layer of sliced BANANA and then pour the pudding/ cool whip mixture on top.

    I love Banana Puding. My Mother makes it all the time. But her's is the kind you use a can of cream 4 eggs and at least 2 stics of butter. THANKS, for an alternative! - 9/22/08
