Introduction

After several tries, I finally perfected this salad, as well as my vinaigrette dressing. This salad is crunchy, tangy and packed with flavor. After several tries, I finally perfected this salad, as well as my vinaigrette dressing. This salad is crunchy, tangy and packed with flavor.

Ingredients

    1 Large package of Frisse lettuce. (You can replace with arugula, but I think the Frisse really makes it.)

    Good olive oil

    Red Wine Vinegar

    Fresh Rosemary, Fresh Thyme and Garlic.

    Goat cheese (3.5oz.)

    Sliced Almonds (the honey almond salad toppers are really good)

Directions

The first thing you want to do is infuses the olive oil. In a bowl put 3 tablespoons of good olive oil, 1 clove of pressed, or really finely chopped garlic, 4 sprigs of thyme (the leaves only, no stems), 1 large sprig of fresh rosemary leaves chopped, a few big pinches of black pepper and a few pinches of salt. Mash up all the herbs and spices in the olive oil and let sit for at least 15 minutes.

Next toast the almonds in a sauce pan for a few minutes to get the flavor and oils alive.

Now all you have to do is wash and dry the frisse and top with crumbles of the goat cheese. The colder the cheese, the easier to crumble with your fingers.

Add 1 tablespoon of the red wine vinegar to the olive oil and mix. Please know that this will not look like a lot of dressing, but it is strong and will coat the salad well.

Now all you have to do is add the toasted, sliced almonds and all of the dressing and toss well.

Makes 6 servings.
