Introduction

Ingredients

8 cups Vegetable Stock
1 large onion, chopped
6T minced garlic
5 cloves minced garlic
1T cumin
2T coriander
1/2 t cayenne
1t paprika
1 red pepper diced
4 yams, peeled and chopped
3 tomatoes, seeded, peeled and chopped (or substitute 1/2 a 15 oz can)
5T natural peanut butter
4T lime juice
Directions
Makes 6 large servings
- Saute the onions in a large dutch oven with non-fat cooking spray until soft. Add the diced red pepper and the yams. Add your seasonings (to taste- add and omit if you like)
- Add vegetable stock, cover and bring to a boil. Reduce to a simmer, and add the tomatoes and peanut butter. Simmer for 30 minutes.
-Puree all or half of the soup, returning to pot- add lime juice and simmer 10 more minutes
This soup can be garnished with crushed dry roasted peanuts, cilantro leaf and extra lime juice, although no garnishes are included in teh calorie count.
