Introduction

Ingredients

    1 lb Lean Beef Stew meat or bottom round cubed
    2 t Olive Oil
    4 t Better Than Bullion Vegetable Soup Base
    30 oz hot water
    1 28 oz can diced tomatoes
    2lbs peeled and cubed butternut squash
    20 dried apricot halves quartered
    12 oz baby carrots chopped in half
    1/2 t salt
    1/2 t pepper
    3T Italian Seasoning
    1/4 cup arrowroot powder
    1/2 cup water

Directions

Brown beef in oil until lightly browned all over. Place in bottom of 6qt slow cooker. Add in soup base mixed with hot water, tomatoes, squash, apricots, carrots, Italian seasoning, salt and pepper. Cover and cook on high for 6 hrs. Vegetables and meat should be tender.

Combine arrowroot and water, stir into stew. Recover and cook on high until thickened, about 30 minutes.
