    2 185 gram cans of tuna in water, drained
    2 hard boiled eggs chopped
    .25 cup parsley chopped
    1 tablespoon olive oil
    .5 tsp salt
    1 tsp black pepper
    1 cup red pepper chopped
    1 cup carrots chopped
    Juice of 1 lemon


Combine all ingredients and stir well. Serve cold with crackers or over lettuce
