Introduction
Great comfort food for those chilly evenings! A good "home cooked" meal with just a few ingredients. If you love stuffed cabbage rolls this fits the bill. It takes a long time to cook the cabbage in the slow cooker, you can boil it if you wish, to cut down the cooking time. The cabbage takes about 12 hours by itself, then another 8 - 10 hours to cook with everything else added. Serves 8. Great comfort food for those chilly evenings! Ingredients
-
1 lb. lean ground beef (can use ground turkey or morningstar veggie crumbles, calorie count will change)
1 head of cabbage cut into small pieces
4 - 8oz. cans tomato sauce
2 cups brown rice
4 cubes beef bouillon
8 cups water
1 tblsp dried parsley flakes
salt and pepper to taste
Directions
Cook rice according to package instructions, put in plastic bowl and refridgerate. Cook ground meat in non stick skillet - refridgerate for later. Cut up cabbage and put in crock pot with 8 cups of water and bouillon. Turn to high and let cook for about 12 hours, I do this the night before, letting it cook all night. ( in the morning) Once cabbage is tender, add cooked ground beef, tomato sauce, parsely flakes and salt and pepper. Let this cook for 8 - 10 hours, on low, add cooked rice (just before serving), simmer till hot. When you get home you have a wonderful meal waiting for you. Serves 8, about 2 cups each. We serve this with a green salad and whole wheat bread or roll. Very filling! This also freezes well for a later meal. I divide it into portion size containers and freeze it.
