Introduction

To make this I use Hodgson Mill's 'Bulgar Wheat and Soy'. It is a really great low calorie whole grain with extra protein from the soy, and although it is marketed as a breakfast grain (you may find it in your health food section's cereal aisle), you can use it for a lot of things. If you can't find it, you could substitute regular bulgar wheat or even kashi 7 grain cereal. To make this I use Hodgson Mill's 'Bulgar Wheat and Soy'. Ingredients

    Marinated Tofu:
    14 oz block extra firm tofu, cut into bite sized pieces
    2 tbsp olive oil
    1.5 tbsp lemon juice
    1 tsp dried oregano
    1 tsp salt
    1/2 tsp red pepper flakes

    Pilaf
    1 cup Hodgson Mill's Bulgar Wheat and Soy
    4 tbsp pine nuts
    12 pieces sun dried tomatoes
    2 medium red (or yellow!) tomatoes
    3 cloves garlic, crushed
    8 tbsp fresh basil
    Juice of one lemon
    2 tsbp olive oil
    balsamic vinegar to taste

    *This is for 4 servings

Directions

1. Whisk together all wet ingredients for the marinated tofu, toss with tofu, and let marinate for over 1 hour.

2. Prepare Bulgar Wheat and Soy according to package directions, adding garlic to cooking liquid.

3. Chop sun dried tomatoes, fresh tomatoes, and basil.

4. Toss all ingredients together.
