Ingredients

    2 large baby zucchini
    1 egg white
    1/4 cup skim milk
    1/2 cup seasoned breadcrumbs
    1/2 cup parmesan cheese

Directions

preheat oven to 425. Cut 2 zucchini into 3-inch sticks. Whisk an egg white in a small bowl and add milk. Combine parmesan and bread crumbs in separate bowl. Dip zucchini sticks into egg mixture and then roll in breadcrumb mixture. Coat a baking sheet with cooking spray and place zucchini on sheet. Bake for 25-30 min. or until golden brown. Make about 32 pieces...or 4 servings of 8

    First experience w/ zucchini a big win. I was thrilled at how AMAZING this is. I'm very unhappy that you plugged in only 1/2 the amts of cheese & bread crumbs (bulk of the recipe's cals) as what's listed in the ingredients. This recipe is actually close to 140 cals/serving.     I absolutely loved these. My son and I tore through them pretty darn fast. They were nice and crispy with a very good flavor. I will not miss fried zuzzhini one little bit thanks to this recipe! - 3/13/17
