Ingredients
-
0.5 lb. bulk Italian Sausage (hot or mild, to taste)
1 medium onion, chopped
3 cloves garlic, minced
4 cups reduced sodium chicken broth
1 15 oz can petite diced tomatoes
1 package frozen chopped spinach
1 cup diced celery
5.5 cup sliced carrots
2 cup frozen cut green beans
1.5 t dried basil
.5 t dried marjoram
pinch hot pepper flakes (to taste)
1 can pinto beans
3/4 cup small shell pasta (optional - I don't use this and so it's not in the calorie calculation)
Directions
Brown sausage and drain well.
In a slow cooker or large pot, combine chicken broth, onion, and garlic. Add sausage when it's ready. Add frozen spinach, celery, tomatoes, spices. Simmer for 3 or 4 hours to blend flavors well. An hour before serving, add chopped carrots and frozen beans. 10 or 15 minutes before serving, add pinto beans. (And pasta, if you're using it.)
This makes about 12 one-cup servings.
