Ingredients

    2 C. Baby Spinach Shredded
    1 C. Thin strips of Carrot
    1/4 C. of diced red bell pepper
    1/2 C of Yellow Corn canned
    1/2 C. of Raisins
    1 Large Red Tomato Diced
    1 Tsp of Olive Oil
    1 tsp of Salt
    1 tbsp of Cider vinegar or red wine vinegar
    Dash of Black Pepper
    Juice of one lemon wedge

Directions

Wash and drain all of the vegetables.Take the baby spinach and shredd into strips as though you were making cole slaw. Shredd the carrots with a cheese grater. Add the corn, raisins, diced tomatoes, diced red bell peppers and place in serving bowl.

For the Dressing:
Mix the olive oil, lemon juice, salt, pepper, and the vinegar in a bowl. Add to the salad. Then toss and mix throughly.
