Ingredients

1 Lemon's Juice
2/3 cup Green Bell Peppers, chopped
3 Cucumbers, peeled seeded and chopped
1 (14 oz) can Black-Eyed Peas, drained
4 oz Goat Cheese, crumbled
1/4 cup Red Onion, sliced thin
1 tsp Oregano, ground
Salt & Pepper to taste
Directions
Whisk oil, lemon juice, oregano, salt and pepper in a large bowl until combined. Add cucumber, black-eyed peas, bell pepper, cheese, and onion; toss to coat. Serve at room temperature or chilled.
