Ingredients

    1Tbs Olive oil
    1 tsp minced garlic
    2 green onions chopped (green tops also)
    1 small hot banana pepper chopped, 1/2 if you don't like it quite as hot (Cayenne peppers can be substituted)
    4-5 sun dried tomatoes chopped (not oil packed)
    1 can low fat chicken broth + water to make 2 cups
    1 cup quinoa
    1 can black beans drained & rinsed
    3 large Basil leaves chopped
    salt & pepper

Directions

heat oil in large saucepan. add tomatoes, green onions banana pepper and garlic and saute for 3-5 minutes.
Add stock or water and bring to a boil. Stir in quinoa and black beans. Return to a boil. Reduce heat & simmer for 30 minutes or until liquid is absorbed. Let stand 5 minutes, Add chopped basil and salt & pepper if needed. fluff with fork.
Makes 6 3/4 cup servings
