Introduction

This is a nice low fat, high protein casserole that tastes great! This is a nice low fat, high protein casserole that tastes great!
Number of Servings: 6

Ingredients

    1# Turkey Breakfast or Italian Sausage
    1 medium Eggplant, cubed
    1 small Zucchini, sliced
    8 oz Mushrooms, sliced
    3 cans Del Monte seasoned Tomatoes (Jalepeno or Italian)
    1/2 cup Scallions, chopped
    2 oz.Tofu, cubed (optional)
    1 cup Shredded Low Fat Cheese

Directions

Saute zucchini, eggplant, mushrooms and scallions in a tablepoon of extra virgin olive oil. Place lid on pan and let simmer until vegetables are tender. While vegetables are simmering, cook sausage and tofu in a deep frying pan. Once meat is cooked, add tomatoes and vegetables. Stir together and pour into baking dish. Bake for 45 minutes at 350. Sprinkle cheese on casserole and let brown. Remove from oven and let sit 5-10 minutes before serving. Makes approximately 6 1-cup servings.
