Introduction

Ingredients

    1 cup yellow onion, diced
    2 cloves garlic, minced
    3 large zucchini, sliced 1-inch thick and then cut in 1/2 = 3 cups approx.
    2 bags of the scalloped squash, each cut in 1/2 = 2 cups approx.
    1 lb boneless pork chop, cubed = OPPTIONAL
    3/4 cup canned (or frozen) sweet corn
    2 tbsp olive oil
    1/4 cup chicken broth
    1 tsp cumin
    2 tsp chili powder or mexican seasoning
    1 tsp oregano
    salt and pepper to taste

Directions

Sauté onions in olive oil till translucent. Then add the garlic till browned then add the pork (optional) and sauté till browned. Once the pork is cooked add the squash and sauté for no more then 3-5 minutes. Add the seasoning, corn, and liquid (make sure the liquid is no more 1-inch in the pan. Reduce heat to medium-low, cover and cook for approximately 20-30 minutes.

Makes a great vegetable side dish when made without the pork or a great full-meal with it!
