Introduction

This soup is delicious and very easy to make! Great on a cool day and you will find that it's even better the next day! This soup is delicious and very easy to make! Great on a cool day and you will find that it's even better the next day!

Ingredients

    In large pot sauté' chicken breasts in olive oil. While they lightly brown, peel 4-6 garlic cloves and one large red onion and blend with 6-8 fresh tomatoes that you have seeded. Add half of any seeded hot pepper to the blender, add half cup of any roasted salsa, blend until smooth. Add blended veggies to pot and sauté'. Add spoonful of concentrated chicken broth and quart of water and one cup of brown rice. Add teaspoon of ground cumin and teaspoon of poultry seasoning and stir. Cover and cook for an hour on medium low. Cut chicken into small pieces with kitchen scissors. Garnish with chips, cheese, corn, avocado or guacamole and/or sour cream. Enjoy!
