Introduction

Great way to use up left over roast pork. Tasty, filling, and quick! Great way to use up left over roast pork. Tasty, filling, and quick!
Number of Servings: 10

Ingredients

    2 pounds cooked roast loin of pork, cubed
    2 med onions, chopped
    2 cloves garlic, chopped
    1-15 oz. can diced tomatoes with hot peppers
    1 cup water
    1 low-salt bouillon cube, beef flavored
    2 T chili powder
    1 t marjoram
    2 bay leaves
    1/2 can black beans, drained and slightly mashed

Directions

Heat skillet and add onions with a little water. Cook 20 minutes until tender and golden. Add garlic for about 5 minutes, then add the remaining ingredients. Cover and simmer about 30 minutes to allow flavors to blend. Serve over cooked rice or crushed saltine crackers. Makes about 10 1-cup servings. (Nutritional info does not include the rice or saltines.) Makes a nice dinner with a side serving of corn topped with salsa. Really good the next day, after the flavors have a chance to blend further!
