Number of Servings: 18
Ingredients
-
2 cups black beans (or 1 can drained and rinsed)
1/3 Cup Sugar
4 egg whites
.5 cup cocoa powder
1 tsp baking soda
2 tsp vanilla extract
3 Tbsp Milk Chocolate chip Morsels
.2 Cups chopped pecans
Directions
Preheat oven 350 degrees.
Mix all ingredients except chocolate chips and nuts in blender, or food processer until very smooth.
Pour batter into 18 cupcake liners. Use a cookie scoop or measuring cup to ensure even parts (batter will rise in oven).
drop nuts and chocolate chips into individual cups and stir a tad. (you can try just mixing it into batter, but I added 4 chips and a bit of nuts in each to ensure I didn't make a plain one)
Bake for about 20 mins in oven. Until toothpick comes out clean or bounces back on top without any goo.
