Introduction

Ingredients

    1 whole chicken
    3 tblsp light margarine
    2 lemons juiced
    1 tblsp thyme
    3 cloves garlic minced finely
    cooking spray
    4 cups frozen green beans defrosted
    1 lb red potatoes cut in half
    salt and pepper to taste

Directions

Preheat oven to 425 spray pan with cooking spray

slice potatoes in 1/2 and place in roasting pan with green beans spray with cooking spray and season with salt and pepper
take chicken remove insides and rinse and pat dry turn over and cut out back bone
turn over and push down to flatten chicken season with salt and pepper and place on top of potatoes & green beans
melt margarine and add garlic and thyme add salt and pepper to your liking ( I use aobut 1 tsp over everything)
using your fingers loosen skin over breast and around thigh and legs using a pastry brush or basting brush dip into butter mixture and brush all over breast thighs and legs use remaining melted butter and brush over skin season with pepper and salt if like

place in oven and bake check after 30-40 minutes if not completely cooked cook an additional 10-15 minutes

serves 8 (1/2 breast , 1 leg, 1 thigh or 2 wings
serve with 1/2 cup green beans and 2 oz of potatoes
