Introduction

Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1 medium chopped yellow onion
    1.5 tspn minced garlic
    8 baby carrots chopped

    1 1/3 c lentils
    4c vegetable broth
    1/2 c beef broth
    1 cup cubed boiled potato with skin
    6oz. cubed 95% fat free ham (3/4 c)

Directions

sautee the carrots garlic and onion in the oil in the bottom of the soup pot then add the lentils and the broth

let simmer for as long as you can - probably about an hour if you like the lentils to be nice and soft and tender

add in the ham and the potatoes whenever you feel like it after the soup begins to look like soup

after it has simmered a while, salt and pepper to taste!

serve with warm bread, or pita or crackers... over rice, cous cous, etc.

makes 4 1/2 1 cup servings once it has simmered and cooked down a bit.

    Very Good
    Very tasty. Even the kids like it! I added a stalk of celery and some black pepper. I cubed a raw potato and added that about 20 minutes after the lentils. - 5/5/11
